Liem’s sushi journey began in 2012 at Kona Grill which quickly inspired a dedication to perfecting the art of sushi. Since then, he’s collected tricks of the trade from various sushi restaurants and elevated his palette with flavors from around the world. With experience in both fine dining and fast-casual concepts, Liem values speed of service with the care and attention of gourmet cuisine.

In 2021, Liem and his wife welcomed their twin boys, Riley and Koda. This new adventure into parenthood challenged his already demanding role of full-time chef as the hours conflicted with the needs of his growing family. To build a more balanced schedule without sacrificing his passion for the culinary arts, Liem embarked on a journey to become a private, home Sushi Chef by creating KASÉ Sushi in 2024.

KASÉ is a Richmond-based home dinner service, which takes inspiration from the tradition of “Omakase” which translates to “I leave it up to you”. But with Liem’s new take on the practice, we infuse a collaborative spirit into the curation of every dinner menu. The Japanese term “kase” is defined as “bonds” or “family relationships”. We believe it is not just the bond between friends and family that makes a meal exceptional, it’s the bonds between chef and guests that elevate food into art.
